Vitória (ES), July 6, 2004 (Agência Brasil) - Quiche made from squash peels, banana skin cake, and manioc juice are creative dishes with great nutritional value. They are part of the Brazil Kitchen - Smart Nutrition project, a partnership between the Ministry of Social Development and Hunger Alleviation, the National Council of the Social Service of Industry (Sesi), and the National Confederation of Industry (CNI). The project will be inaugurated today in Vitória, Espírito Santo, by Minister Patrus Ananias, who will partake of a breakfast based on this alternative menu.
A mobile unit from the project will visit municipalities in the state and provide orientations on healthful, inexpensive eating to low-income communities. A demonstration kitchen, equipped with appliances and other utensils and capable of holding 30 students, was adapted to a trailer rig. According to the Ministry's advisory office, the object of the project is to combat waste and show that it is possible to prepare food safely, economically, and healthfully.
550 people participated in the pilot project in the municipality of Vela Velha, Espírito Santo. The Sesi National Council informs that the goal is to train 100 thousand people throughout Brazil. By the end of August, training will be conducted in the states of Minas Gerais, Piauí, Pernambuco, and São Paulo.
